One of my favorite muffins, ever. Or one of the only muffins that I actually enjoy eating; I’m not a huge muffin fan.
These muffins are so banana-y and moist; and of course the chocolate chips make them even better.
Chocolate makes everything better.
Chocolate Chip Banana Muffins
2 C all-purpose flour
1 tsp baking soda
1 tsp baking powder
¼ tsp salt
½ tsp ground cinnamon
¼ tsp ground nutmeg
¼ tsp ground clove
¼ tsp ground ginger
½ C unsalted butter, softened
½ C lightly packed brown sugar
2 eggs, slightly beaten
1 tsp vanilla extract
2 C mashed banana, about 4 large bananas
1 C chocolate chips
1. Preheat oven to 325 F
2. In a bowl, sift together flour, baking soda, baking powder, salt, and spices; set aside
3. In another bowl, cream together softened butter and sugar until light and fluffy.
Beat in eggs and vanilla extract, a little at a time, until well smooth. Mix in mashed banana until well combined
4. Take two tablespoons of flour mixture and toss it with chocolate chips together, set aside.
Add rest of the flour mixture into the banana mixture in three parts; mix until almost incorporated before each addition.
Mix in chocolate chips.
5. Spoon batter into prepared muffin cups. This batter doesn’t rise much. Bake for 20-22 minutes, or until the tops are golden.
Leave them in the pan for 5 minutes and then move them to cooling rack to let cool completely.
